The Callinectes sapidus, commonly known as the blue crab or Chesapeake blue crab, is a species highly sought after for its sweet, tender meat and distinctive blue hue on its claws and carapace (shell). Blue crabs are primarily found in the Atlantic Ocean and the Gulf of Mexico, ranging from Nova Scotia down to Argentina. We also source our sapidus crabs as far as the Mediterranean. Highly prized for their sweet, succulent meat, blue crabs are a culinary delicacy in many coastal regions. Their meat is used in various dishes, such as crab cakes, soups, and seafood boils. They are also economically important in commercial fisheries, supporting livelihoods in areas where they are abundant.
